I am not much of a cook nor am I all that interested in being one. But I am human, and I need to eat. I also have a family to feed (and sometimes others outside of it), so occasionally, my brain is enlightened to create some easy, reliable, and healthy concoction.
It’s this wonderful must-try pasta salad idea that’ll take max five minutes to put together, but first, you will need to take a trip down to your local Costco.
I recently discovered this pasta salad from a church member who had brought it to a bible study meetup. It was so up my alley (I love tangy and vinegary things, and this was just hitting) that I grabbed it the next time we were at Costco.
Here’s what you’ll need:
- Tortellini Pasta Salad with Mozzarella Pearls and Dressing (in the Deli section)
- A container of your choice of greens (I use spinach, but you can use whatever – kale, spring mix, arugula, whatever you have in your fridge)
- Optional: Extra veggies (I had tomatoes and onions, but whatever you conveniently have that you want to throw in)
Now for the easiest part.
Find your biggest mixing bowl and dump everything in it.
Mix, mix, mix.
If you’re going for more of a pasta, then don’t throw all your greens in there. But if you’re going for more of a salad (like me), then throw in all your greens. I’ll leave the pasta vs. greens ratio up to you.
You don’t have to add any extra seasoning because it’s already flavored so well that by adding more greens, the pasta salad will actually become lighter, fresher, and more digestible.
You can use this for any occasion including:
- Potlucks
- A side dish for the family dinner table
- Weekly meal preps
- Maybe even part of the menu of a bridal or baby shower event
As a non-cook and someone who likes healthy things, this is super simple, practical, and delicious. This is my current go-to weekly prep, and I would love to introduce this at our next potluck event.
